I'm not sure whether the straw is of any importance. Before I started watching this I thought it involved supercooled water; what you need is nice pure water and cool it below freezing temperature in a very clean glass. It'll stay liquid. But drop in the tiniest impurity and BOOM it turns to ice instantly. But that doesn't appear to be what's going on here.

It's either supercooled water or a supersaturated solution of photographic hypo.  If you drop a few crystals into the solution and give it a quick stir, it solidifies like that.

I think it's a genuine trick, but the actual visual is fake to try and make it look better than it is (but without succeeding).
